You can set your desired angle by placing a gauge block beneath the blade holder or a digital angle gauge above the blade holder and adjusting it to your target angle, commonly 25° for a first sharpening or grind or 30° to add a micro-bevel. Once locked in place, the holder keeps every blade at that same consistent angle until you reset it.
